Abstract
The low prevalence of exclusive breastfeeding in Indonesia is caused by numerous causes, one of which is inadequate breast milk supply. Sauropus androgynus (katuk leaves) and Coleus amboinicus (torbangun leaves) are known to contain high levels of flavonoids and antioxidant activity, making them potentially effective for enhancing breast milk production. This study aimed to analyze the antioxidant activity, total flavonoid content, and organoleptic properties of an instant powder drink formulated from katuk and torbangun leaves as an alternative to support breast milk production. A Completely Randomized Design (CRD) with two replications was used. The treatments consisted of three formulations with varying proportions of torbangun and katuk powder: F1 (4 g : 8 g), F2 (8 g : 16 g), and F3 (12 g : 24 g). Antioxidant activity was measured using the DPPH method, and total flavonoid content was assessed by the AlCl₃ spectrophotometric method. Organoleptic tests involving 30 semi-trained panelists were analyzed statistically using the Kruskal-Wallis test and the Mann-Whitney post-hoc test. Data on flavonoid content and antioxidant activity were examined using one-way ANOVA, then analyzed using Duncan’s multiple range test. Statistical analysis showed that the proportion of powders significantly affected color (p=0.008), texture (p=0.000), and taste (p=0.000), but not aroma (p=0.905). While antioxidant activity increased with powder addition, the variation was not statistically significant (p=0.64). Total flavonoid content differed significantly between F1 and F3 (p=0.04). Based on De Garmo’s effectiveness analysis, F2 was selected as the optimal formula with a productivity score of 0.612. Nutritional content per 50 g serving of F2 included 191.35 kcal energy, 2.89 g protein, 0.61 g fat, 43.15 g carbohydrates, 2,481.55 ppm antioxidants, and 27 mg total flavonoids.
