Abstract
The high prevalence of extraordinary events of food poisoning caused by E. coli in street food, shows the lack of hygiene and sanitation of street food processing. Fruit Soup is a very popular street food, liked by people. Generally, the traders sell fruit soup openly on roadsides. The processing to make fruit soup is done without cooking / heating or raw foods that can cause various health problems. The ingredients of Fruit Soup is fresh fruits that contains high nutrient, ice cubes, milk and molasses which is a good medium for microbe to growth. The purpose of this research is to find out the hygiene and sanitation, and the extent of contamination of E. coli in Fruit Soup that sold in Cililitan village, Kramat Jati sub-district, East Jakarta. This research using analytic observational study with cross sectional design on 20 traders Fruit Soup, samples were taken with total sampling technique. Data were obtained from interviews and observation using a questionnaire, and test the Fruit Soup sample in laboratories using Most Probable Number (MPN) method. The results showed E. coli contamination that exceeds the maximum limit of microbe contamination on foods based on food and drug inspection agency are 19 (95%) samples. This is because traders do not meet the requirements of sanitation and hygiene in food processing, food preparation, food management and food handlers that can cause cross-contamination. There should be control and counseling by the relevant agencies about the importance of hygiene and sanitation of street food, so the street food can fill the health terms and safe for people to consume.
