Abstract

Obesity is a growing nutritional problem in Indonesia. In 2023, the prevalence reached 23.4%, up 1.6% from 2018. Dietary fiber promotes satiety and delays gastric emptying. Dried noodles are widely consumed but low in fiber because they are made from wheat flour. Suweg and red beans are high-fiber local foods with potential for dried noodle production. This study analyzed the dietary fiber, protein, moisture content, and acceptability of dried noodles made from suweg and red bean flours. The method used was a Completely Randomized Design (CRD) with three formulations, F1 (25:75), F2 (40:60), and F3 (55:45) and two replicates. Chemical data were analyzed using one-way ANOVA and Duncan's test, while organoleptic data were analyzed using the Kruskal-Wallis and Mann-Whitney tests. The results showed that different flour proportions significantly affected moisture content (p = 0.032), protein (p = 0.001), and dietary fiber (p = 0.002). Color and texture of dried noodles, and color, aroma, and texture of cooked noodles differed significantly (p < 0,05), whereas taste did not. Based on the De Garmo method, F3 was the best formulation, with a fiber content of 25.47 g/100 g, meeting the moisture and protein content SNI requirements and BPOM criteria for high-fiber foods.
