Abstract

Quality control is essential for maintaining product consistency and minimizing defects throughout the production process. Pabrik Tahu Bandung in Bintaro continues to experience quality issues, including non-uniform tofu size, fragile texture, and sour taste. This study aims to analyze the quality control process, identify failure modes in tofu production, and propose improvement strategies using the Failure Mode, Effect, and Criticality Analysis (FMECA) method. A quantitative descriptive approach was employed, with data collected through observations, interviews, and documentation. The analysis was conducted by evaluating the Severity, Occurrence, and Detectability parameters to determine the Risk Priority Number (RPN). The results show that the production process generally follows standard tofu manufacturing procedures; however, several non-conformities with SNI 3142:2018 and the Good Processed Food Manufacturing Practices (CPPOB) guidelines were identified, particularly during the boiling, coagulation, and cutting stages. The FMECA analysis identified three priority failure modes: non-uniform tofu size with an RPN value of 294, unstable boiling temperature with an RPN value of 140, and the use of non-fresh tofu starter whey with an RPN value of 126. These findings indicate deficiencies in the existing quality control system. Therefore, the proposed improvements focus on process standardization, production parameter control, and the refinement of operating procedures to enhance quality control effectiveness and reduce product defects.
