Abstract
Komariah tofu factory is a manufacturing company that produces raw materials into finished goods in the form of tofu. Based on the results of field observations and the distribution of questionnaires, in the production process there are several indications of waste that require identification to minimize or even eliminate non-value-added activities. The purpose of this study is to identify the causes of waste and provide recommendations for improvement proposals in reducing waste. Lean manufacturing methods used in this research include Value Stream Mapping (VSM) to map the entire production process and Failure Mode Effect Analysis (FMEA) to recommend proposals for improving the waste that occurs. The three highest wastes obtained based on the 7 waste questionnaire data processing are inappropriate process, waiting, and defects. The results showed that the proposed recommendations can reduce cycle time by 27.5 minutes and eliminate all Non-Value Added Activities (NVA) and increase Value Added Activities (VA) to 245.6 minutes.
