Abstract
A cloud kitchen is a kitchen facility used to prepare and cook food that will be delivered directly to customers through online delivery services or takeaway, as this concept does not have a dine-in area and shares space among multiple brands or restaurants. This cloud kitchen consists of several kitchen units, thus requiring good air circulation. The total volume of the 19 cloud kitchen units is 407.2775 m³ or 14,383 ft³, so to meet the standard Air Change/Hour (ACH) value for commercial kitchens, which is a minimum of 30 ACH, air exchange using a ducting system is needed at a rate of 7,191.5 ft³/m. Simulation results indicate that the air velocity distribution in the ducting ranges from 0 m/s to 78.7 m/s, the pressure distribution ranges from 3900 Pa to 11125.8 Pa, and the air temperature distribution ranges from 52.3°C to 63°C. The selected exhaust fan is a centrifugal fan from Twin City Fan, model BAFF 430, with an exhaust capacity that meets the requirements, namely 7,050 – 12,300 m³/h.
