Abstract
The food industry is increasingly utilizing mushrooms as a primary ingredient due to their potential to be processed into delicious and healthy foods. The popularity of mushrooms is on the rise, especially among vegetarians seeking meat alternatives. The high consumer demand for mushrooms emphasizes the need for companies to focus not only on quantity but also on the quality of their products. CV Jamur Kita Sukabumi, as a mushroom producer, faces challenges with defective products in mushroom baglogs, exceeding the company's target percentage. In response, CV Jamur Kita Sukabumi is actively seeking solutions to address the issue of defective products to uphold the quality and reputation of the company. Therefore, this research is conducted at CV Jamur Kita Sukabumi to control production quality using the Six Sigma method and the Kaizen 5W+1H tool to address these challenges. The research findings indicate that the dominant types of defects in mushroom baglogs are the failure of mushroom mycelium growth and contamination of mushroom baglogs. Proposed improvements are formulated based on the factors causing defects, including man, machine, material, method, and environment factors. The sigma level at CV Jamur Kita Sukabumi is initially 3.80330 and increases to 3.92370 after the implementation of improvements.
