Abstract

One way to prevent or treat diabetes is to regulate eating techniques. The purpose of this study was to analyse the relationship between eating techniques and post-prandial blood glucose levels. The method used in this study was an experimental study design with 11 healthy adults as subjects. There were two groups in this research, namely the treatment group 1 which ate rice by hand and the treatment group 2 which ate rice using a spoon. Measurement of blood glucose response was carried out using the finger prick method with test strips, and portable meters. The results of the intervention showed that the average blood glucose level in the treatment group eating using a spoon was lower than eating with their hands. The results of the paired t-test showed that there was a significant difference in the two treatment groups at 30, 45, 60 and 90 minutes (p <0.05) and the area of AUC (Area Under Curve) (P = 0.00) was significantly different as well as lower use of eating rice using a spoon compared to eating rice using hands. Thus, it can be concluded that there is a significant difference between eating technique and post-prandial blood glucose levels.
