Abstract
Diabetes mellitus is a severe health problem in Indonesia because the number of sufferers increases every year. The results of the Riset Kesehatan Dasar 2018 showed that the number of diabetics in Indonesia has increased significantly over the last five years, from 6.9% in 2013 to 8.5% in 2018. The purpose of this study is to formulate a cereal using dahlia tuber flour for people with Type 2 Diabetes Mellitus (DMT2). In addition, this study also analyzed the proximate, inulin, and organoleptic levels of cereals dahlia's tuber. The research method used a Completely Randomized Design (CRD) with two repetitions. Data analyses used for proximate and inulin levels were carried out using the One Way ANOVA and then continued using the Duncans Multiple Range Taste (DMRT) test if necessary. The organoleptic analysis of the product used the Kruskal Wallis method and then continued with the Mann-Whitney test. The determination of the selected formula using the Exponential Comparison Method (MPE) by looking at various parameters. The results of the analysis of the addition of dahlia tuber flour showed that there was an effect (p<0.05) on the color and taste of the cereal, while the parameters of proximate, inulin, texture, and aroma had no significant difference (p>0.05).
