Abstract

Iron deficiency anemia remains a global issue, necessitating increased consumption of iron sources and enhancers. Winged bean seed flour is rich in iron, while milkfish contains protein that can enhance iron absorption. This study aims to determine the protein and iron content, organoleptic properties, and the best formulation of milkfish chips with winged bean seed flour. The formulations compared were F1 (30g: 20g), F2 (35g: 15g), and F3 (40g: 10g). Nutritional content data were analyzed using ANOVA, while organoleptic data were analyzed with the Kruskal-Wallis test. The results showed that only the iron content had a significant value (p < 0.05), whereas protein content and organoleptic properties had non-significant values (p > 0.05). Based on De Garmo's test, considering the evaluation of all parameters, F3 was selected as the best formulation for milkfish chips with winged bean seed flour. It can be concluded that only iron content is significantly affected by the proportion of milkfish and winged bean seed flour. Therefore, it is recommended to wash and soak the ingredients to reduce the off-flavor and odor, make a thin batter, or soak the batter in NaHCO2 for future research.
