Abstract

Hypertension is a disease caused by blood pressure and can be controlled by consuming nutrients that are good for sufferers. Telang flowers and red dragon fruit are foods that contain anthocyanins and potassium which are good for hypertension. The purpose of this study was to analyze the effect of telang flower extract on anthocyanin levels, potassium, and organoleptic properties of red dragon fruit jelly. The research design used a one-factor completely randomized design (CRD) with two repetitions. These factors are the jelly formulation which has three levels, F1 (5 g), F2 (7 g), and F3 (9 g). Organoleptic test analysis, anthocyanin levels, and potassium were each tested using Kruskal Wallis and ANOVA and differences would be found. The analysis showed that there was no significant difference in the organoleptic test and potassium levels (p> 0.05), while in the anthocyanin content test there was a significant difference (p = 0.024). The selected formula is F3 which has energy (29.54 kcal), air content (71.96%), ash (0.66%), carbohydrates (6.94 g), fat (0 g), protein (0, 44 g), anthocyanins (15,277 mg), and potassium (287.5 mg).
