Abstract

Obesity is a major public health problem associated with inadequate dietary fiber intake and increased oxidative stress. This study aimed to evaluate the effect of kepok banana peel flour addition on dietary fiber content, antioxidant activity, and the sensory acceptability of bilimbi (Averrhoa bilimbi L.) jelly stick, as well as to determine the optimum formulation. The experiment employed a Completely Randomized Design (CRD) consisting of three formulations with three replications. Sensory evaluation data were analyzed using the Kruskal–Wallis test followed by the Mann–Whitney test, while dietary fiber content and antioxidant activity were analyzed using One-Way Analysis of Variance (ANOVA) followed by Duncan's Multiple Range Test (DMRT). The addition of kepok banana peel flour significantly affected the dietary fiber content (p<0.05), with values of 6.50%, 6.86%, and 8.90% for F1, F2, and F3, respectively. In contrast, no significant difference was observed in antioxidant activity (p>0.05), with IC₅₀ values of 4,982.24 ppm, 4,523.78 ppm, and 4,820.01 ppm, respectively, indicating very weak antioxidant activity. The treatment did not significantly affect color but significantly influenced aroma, taste, and texture (p<0.05). Based on the De Garmo effectiveness index method, F2 was selected as the best formulation with a Product Value (PV) of 0.55.
