Abstract

Iron deficiency anemia in adolescent girls remains a nutritional problem in Indonesia, so alternative functional foods are needed to support the fulfillment of iron intake. This study aims to develop a snack bar formulation based on soybean flour, anchovy flour, and rosella flowers as an alternative snack to prevent iron deficiency anemia in adolescent girls. This study is an experimental study with a one-factor Completely Randomized Design (CRD) consisting of 3 formulations, namely F1 (55 g: 13 g: 12 g), F2 (50 g: 18 g: 12 g), and F3 (45 g: 23 g: 12 g). Nutritional content data were analyzed using ANOVA and Duncan’s Multiple Range Test (DMRT), while organoleptic data were analyzed using the Kruskal-Wallis test and Mann-Whitney. The best formula was determined using the De Garmo method. The results showed that the formulation significantly affected the levels of iron, water, fat, carbohydrates, energy content, and taste parameters (p < 0.05). In contrast, ash and protein content, as well as color, texture, and aroma parameters were found to have no significant effect (p > 0.05). The best formula was F1 with a serving size of 30 g containing 86,4 kcal, 7,2 g protein, 4,1 g fat, 5,08 g carbohydrate, and 0.25 mg iron. This formula does not meet the requirements for a food source of iron, but does meet the requirements for a high-protein food product.
