Abstract
High-intensity physical activity may cause muscle damage and inflammatory responses that require functional nutrients such as branched-chain amino acids (BCAA) and omega-3 to support post-exercise muscle recovery in athletes. Organic chicken is known as a source of BCAAs, while sea crab contains omega-3 fatty acids such as EPA and DHA. The combination of these ingredients has the potential to be developed into a practical functional food product in the form of dumplings. This study aimed to analyze the BCAA and omega-3 contents of dumplings formulated with organic chicken, sea crab, and their combinations as functional foods to support post-exercise muscle recovery in athletes. This study employed an experimental design using a completely randomized design (CRD) consisting of three formulations with two replications. BCAA analysis was conducted using LC-MS/MS, while omega-3 analysis was performed using GC-FID. Data were analyzed using one-way ANOVA followed by Duncan’s Multiple Range Test (DMRT). The results showed that formulation F2 produced the most balanced profile of BCAA and omega-3 among all treatments. Formulation F2 contained free BCAA consisting of 0.1590 mg/g leucine, 0.1466 mg/g isoleucine, and 0.1456 mg/g valine, with an omega-3 content of 0.18 g/100 g. The combination of free BCAA and omega-3 in formulation F2 indicated its potential to support post-exercise muscle recovery. It can be concluded that dumplings formulated with organic chicken and sea crab have the potential to be developed as functional foods containing free BCAAs and omega-3 to support post-exercise muscle recovery in athletes.
