Abstract

This study analyzes the implementation of quality control in coffee serving, the consistency of coffee quality, and the factors causing quality inconsistency at Byarin Coffee Shop. The problem arose because differences in coffee taste among baristas had not fully followed the standard operating procedure. A descriptive qualitative case study method was used, with data collected through observation, in-depth interviews, documentation, and questionnaires involving the operational manager, baristas, and customers. Data were analyzed using the Quality Control Circle (QCC) approach through the PDCA cycle and the seven tools, namely check sheets, histograms, and fishbone diagrams. The findings show that the inconsistency rate of espresso yield before the new SOP averaged 7.68% during October 2025–March 2026, reaching a peak of 10.78% in the third week of March. After the new SOP based on a volumetric yield parameter (54–72 ml) was implemented, the nonconformity rate decreased to 6.67%. Customer perception data reinforce this finding: the average conformity level of taste, aroma, and visual indicators increased from 77.1% to 92.9%. The main factors causing inconsistency were identified through a fishbone diagram as human, method, machine, and material aspects. These results confirm that QCC, supported by PDCA and the seven tools, is effective for driving continuous quality improvement in a small coffee shop business.
