Abstract

Coffee bean selection at ABRAM Café currently relies on conventional methods and the verbal intuition of baristas without standardized parameters, risking personal subjectivity bias. This study aims to develop a web-based Decision Support System (DSS) refers to the standardized sensory parameters of the Specialty Coffee Association (SCA) to standardize evaluations from baristas as expert users based on their empirical experience. The Analytical Hierarchy Process (AHP) method was utilized for criteria weighting, and the Weighted Product (WP) method was applied for alternative ranking. The evaluated criteria included Acidity, Aftertaste, Aroma, Flavor, Purchase Price, Body, and Sweetness, with respective weights of 0.19, 0.16, 0.15, 0.14, 0.13, 0.12, and 0.12. Based on the evaluation of 15 selected coffee bean varieties, the system successfully identified Aceh Gayo Arabica as the best alternative with the highest preference value of 0.073, followed by Robusta Java Monk (0.072) and Kintamani Arabica (Bali) (0.070). This DSS successfully transforms the raw material selection procedure at ABRAM Café into an objective, consistent, and quantifiable digital workflow.
