Abstract

The prevalence of diabetes mellitus has increase globally, including in Indonesia, primarily due to imbalanced diatary patterns. This study developed functional crackers based on sorghum and pumpkin flour as a source of fiber and natural antioxidant to aid blood sugar control. The research aimed to analyze the cure fiber content, antioxidant activity, and sensory quality of the crackers. A Completely Randomized Design (CRD) was empoyed with three formuations: F1 (75% sorghum : 25% pumpkin), F2 (65% sorghum : 35% pumpkin), and F3 (55% sorghum : 45% pumpkin). Data were analyzed using ANOVA for crude fiber and antioxidant parameters, while Kruskal-Wallis test assessed sendory attributes. The best formulation was selected using the De Garmo effectiviness analysis. ANOVA results revealed significant differences in crude fiber content (p=0.018) between F1-F2 and F1-F3. The Kruskal-Wallis test indicated significant variations in color preference (p=0.001). Formula F1 emerged as the optimal choice with a productivity value of 0.505.
