Abstract

UMKM Papandra faces challenges in meeting market demand, as the production of kue gelek is still carried out manually. This process takes up to two hours to produce 1 kg of dough, making it inefficient and unable to meet the increasing market demand. To address this issue, a small-scale kue gelek production machine suitable for UMKM is needed. The machine is designed with a screw conveyor system that pushes the dough toward the mold, where it is then automatically cut. The research method includes stages of needs identification, design, manufacturing process, and performance testing. The test results show that the machine is capable of processing 1 kg of dough in 4 minutes and 42 seconds, yielding a final product weight of 800 grams, with a production capacity of 10.2 kg/hour.
