Abstract

Hypertension is the most common non-communicable disease experienced by people in Indonesia. Generally, hypertension occurs due to an improper diet. Nutrients that can help people with hypertension are the intake of fiber and minerals such as potassium. The intake of fiber and potassium in Indonesian people tends to be unfulfilled. Foodstuffs that have a high dietary fiber and potassium content, for example, gembili tubers and purslane. This study aims to analyze the nutritional value, physical properties, and organoleptic properties of rice analogues from gembili tuber flour with purslane fortificant. The chemical analysis carried out was in the form of proximate analysis, dietary fiber content, and potassium content. Data analysis uses the ANOVA (Analysis of Variance) test for chemical analysis and physical properties. Kruskal-Wallis analysis for organoleptic assays. Based on the data results, the product with the best formulation is an F3 product with a Product Value of 0.50. The difference in the proportion of gembili and purslane tuber flour had a significant effect on the protein and dietary fiber content of analog rice (p<0.05) and did not have a significant effect on all physical tests and organoleptic test parameters carried out (p>0.05).
