Abstract
The prevalence of stunting in Indonesia has decreased but the reduction program must continue. The stunting problem is important to solve because it affects the quality of human resources. One of the causes of stunting is a lack of macro (carbohydrate, protein, and lipid) and micronutrient (calcium) intake. The purpose of this study was to utilize anchovy flour as a high calcium food ingredient in the manufacture of nuggets and to determine the effect of the addition of anchovy flour on proximate levels, calcium, and organoleptic properties of nuggets. This research used Complete Randomized Design (CRD) method with three different treatments and two repetitions. The proportions of patin fish with anchovy are F1 (75:25), F2 (50:50), and F3 (25:75). Analysis of chemical properties using ANOVA test and Duncan test showed significant changes on ash content, moisture content, and calcium content, but no significant effect on protein content, carbohydrate content, and fat content. Organoleptic test data analysis using Kruskal Wallis test and Mann Whitney test showed significant changes in the level of liking for color, texture, aroma, and taste of nugget. Nugget formulation F2 became the best formulated with a nutritional composition in one serving (100 g); energy 150 kcal, protein 18 g, fat 3 g, carbohydrate 13 g, and calcium 215 mg/100 g.
