Abstract
Objective The rapid development of infrastructure in Indonesia has changed people's lifestyle and diet to one that is high in calories, fat, and sugar, but low in fiber and protein. This leads to an imbalance in nutrient and energy intake, increasing the risk of overnutrition. Consumption of energy-dense snacks can directly affect a person's weight. Crackers are a popular snack due to their long shelf life, affordable price, and varied flavors. However, the raw material for crackers is low-protein wheat flour. Straw mushroom can be used as an additional ingredient in making crackers to develop the nutritional content of crackers. This study was conducted to determine the nutritional content and ALT microbial contamination of crackers with straw mushroom formulation and its suitability for SNI crackers quality requirements. Method The research design used was True experimental with descriptive analysis approach. The selected formulation was determined through the exponential comparison method (MPE). The research samples were 3 crackers formulations with different straw mushroom content (50 g; 100 g; and 150 g). Results The results showed that crackers with straw mushroom formulation had the following range of nutritional content and microbial contamination: moisture content of 2.16% - 6.28%; ash content of 3.76% - 4.39%; protein content of 12.36% - 15.39%; fat content of 12.77% - 15.74%; carbohydrate content of 61.73 - 65.98%; and ALT microbial contamination of 9.4 x 103 - 1.0 x 104 colonies/gr. Conclusion Crackers F1 and F2 are formulations that meet the nutritional quality requirements, all three formulations meet the ALT microbial contamination quality requirements, and crackers F2 is the selected crackers formulation.
