Abstract
Starfruit is a rich source of antioxidants and potassium, making it a promising raw material for functional beverages that may support blood pressure management. This study investigated the effects of substituting tea with starfruit juice on the antioxidant activity, potassium content, and pH of starfruit kombucha. A Completely Randomized Design (CRD) consisting of five formulations was applied, with tea to starfruit juice ratios of 100:0, 75:25, 50:50, 25:75, and 0:100. Antioxidant activity was evaluated using the DPPH assay and expressed as IC₅₀, while potassium content and pH were determined using ICP-OES and a pH meter, respectively. Statistical analysis was performed using one-way ANOVA followed by Duncan’s multiple range test at a significance level of p < 0.05. Increasing the proportion of starfruit juice significantly increased potassium content and reduced pH (p = 0.000), whereas antioxidant activity was not significantly affected (p = 0.094). According to the De Garmo method, formulation F5 was identified as the optimum formulation, providing 93.79 kcal, 0.13 g protein, 0.10 g fat, 23.46 g carbohydrates, and 258.88 mg potassium per 330 mL serving, with an antioxidant activity of 237710.25 ppm and a pH of 2.
