Abstract

Stunting is a nutritional issue that leads to impaired growth in children. Toddlers with Autism Spectrum Disorder (ASD) are at risk of stunting due to selective eating behaviors. Bread roll can be used as supplementary food by utilizing blue swimming crab and organic chicken. Analyze the effect of blue swimming crab and organic chicken composition on the proximate and organoleptic properties of bread roll are the aim of this study. The study used a Completely Randomized Design (CRD) with three treatment levels and two replications. The ratios of blue swimming crab to organic chicken were F1 (100:0), F2 (50:50), and F3 (0:100). Results showed that the composition affected proximate content and taste, but had no effect on color, aroma, and texture. The best formulation was F2. In conclusion, the composition of blue swimming crab and organic chicken affects proximate content and taste without influencing color, aroma, and texture. Bread rolls with the F2 formulation can be used as an alternative supplementary food because in 125 g they contain 218,08 kcal of energy, 12,98 g of protein, 5,78 g of fat, and 28.55 g of carbohydrates.
