Abstract
Food hygiene and sanitation practices are essential to ensuring food safety. BPOM reported that the food service sector, including catering services and restaurants, has been the leading contributor to foodborne disease outbreaks over the past five years, with household-type food services accounting for 57.25% of cases in 2024. East Jakarta is among the highest contributors to food poisoning cases in DKI Jakarta, with Ciracas Subdistrict recording the highest percentage (64%) of non-compliant Food Establishments. This study aimed to identify factors associated with food hygiene and sanitation practices and to analyze the most dominant factor among them. This study employed a cross-sectional design, collecting primary data via structured interview questionnaires from 112 food handlers selected using an accidental sampling technique. Data were analyzed at the univariate, bivariate (chi-square test), and multivariate (Cox regression) levels. A total of 56.3% of respondents exhibited poor food hygiene and sanitation practices. Knowledge, attitude, education level, hygiene and sanitation facilities, training, and supervision were significantly associated with this practice, with hygiene and sanitation facilities identified as the most dominant factor (p-value=0,026; Adjusted PR=5,27; 95% CI: 1,21–22,87). Restaurant owners are advised to provide separate facilities for washing utensils and ingredients, while local health departments are advised to conduct inspections in accordance with existing guidelines, provide education, and offer food safety training on relevant topics.
