Abstract
Good supply chain performance plays a crucial role in ensuring the availability of food products, delivered in a timely, efficient, and high-quality manner. However, in the small and medium-sized food industry (UMKM) sector, numerous constraints still hinder operational optimization and production outcomes. These problems are also found at Nasi Oval Catering in Depok. The main issues identified include low demand forecasting accuracy, inconsistency in the timing and quantity of raw material delivery from suppliers, suboptimal raw material utilization efficiency, slow product packaging processes, and the absence of a formal return system. This study aims to comprehensively evaluate supply chain performance using the Supply Chain Operations Reference (SCOR) model and determine improvement priorities using the Analytical Hierarchy Process (AHP). The analysis focuses on four main processes: Plan, Source, Make, and Deliver. The analysis results show a combined performance score of 80.03 out of 100, categorized as "Good Performance." The Make (Production) process emerged as the strongest aspect, with high scores on production scheduling accuracy indicators. Meanwhile, the Plan, Source, and Deliver processes remain suboptimal and require improvement, particularly concerning demand forecasting accuracy and product packaging speed. The Return aspect was not analyzed due to the lack of a formal return system. This study recommends improving demand planning accuracy, supplier evaluation consistency, as well as logistics efficiency and packaging workflow to enhance supply chain performance sustainably.
