Abstract
This study analyzes the effectiveness of raw material inventory management using the Just-In-Time (JIT) method at UMKM Katering Aqiqahqu Ciganjur. The study aims to address problems related to fluctuations in inventory levels, including excess inventory and shortages of raw materials such as shallots, garlic, chili, and rice. These issues often lead to increased storage costs, risks of material deterioration, and disruptions in the production process. This research employs a quantitative descriptive approach using primary data obtained through interviews and observations, as well as secondary data in the form of purchase records and inventory cost data during 2022. The analysis was conducted by comparing the conventional inventory system used by the company with inventory calculations based on the JIT method, focusing on inventory cost efficiency and inventory turnover rates. The results indicate that the implementation of the JIT method reduced total inventory costs from Rp4,878,000 to Rp2,224,000, resulting in cost savings of Rp2,654,000 or 54.39%. In addition, the JIT method increased inventory turnover for all raw materials analyzed. This study concludes that the Just-In-Time (JIT) method is effective in improving the efficiency of raw material inventory management and supports better operational performance in small-scale catering businesses.
