Abstract
The restaurant industry often faces the issue of high employee turnover, which is influenced by physical and mental workload. Restaurant XYZ in Gading Serpong, Tangerang, faces a similar problem with an imbalance in the workload of waitstaff and kitchen employees. This study aims to analyze the physical and mental workload using the Full Time Equivalent (FTE) method to measure physical workload and the Define Research Agency Workload Scale (DRAWS) to assess mental workload. The results show that before the improvements, the average FTE value for waitstaff was 1.99 and for kitchen employees was 1.66, indicating overload for most employees. Meanwhile, the average DRAWS score for waitstaff was 72.5 and for kitchen employees 72.4, indicating high stress levels due to multitasking and time pressure. After the proposed improvements, which included adding more staff, the average FTE values decreased to 1.24 for waitstaff and 1.1 for kitchen employees, showing a more balanced and appropriate workload. The addition of staff is expected to reduce excessive workload, improve job satisfaction, and decrease employee turnover at the restaurant.
