Abstract

Good supply chain performance plays a crucial role in ensuring product availability in a timely, efficient, and high-quality manner. However, in the small-scale food industry sector, numerous issues still hinder operations and production outcomes. These problems are also present at the Sari Murni Tofu Factory in South Jakarta. The main issues include inaccurate demand planning, dependence on a single supplier, traditional production processes, distribution without quality control, and the absence of a formal return system. This study aims to comprehensively evaluate supply chain performance using the Supply Chain Operations Reference (SCOR) model and the Analytical Hierarchy Process (AHP). The analysis focuses on the Plan, Source, Make, and Deliver processes, while improvement priorities are determined using AHP. The sampling technique used was saturated sampling, involving five respondents directly engaged in the supply chain. The analysis results show a performance score of 77.32 out of 100, categorized as “Good Performance.” The Deliver process emerged as the strongest aspect, with scores above 80 across all indicators. Meanwhile, the Plan, Source, and Make processes remain suboptimal and require improvement. The Return aspect was not analyzed due to the lack of a formal return system. This study recommends improving demand planning accuracy, logistics efficiency, supplier diversification, and quality evaluation systems to enhance supply chain performance sustainably.
