Abstract
Quality control is an important element in ensuring consistency and customer satisfaction in the manufacturing industry and also the company's operational management. This study aims to analyze product quality control at Sari Murni Tofu Factory using Six Sigma method with DMAIC (Define, Measure, Analyze, Improve, Control) approach. Production data and defect data of yellow tofu and fried tofu of Sari Murni were analyzed using tools such as Pareto diagram, Fishbone Diagram, and P-Chart to identify the type and root cause of product defects. The results showed that there was a level of defects in yellow tofu and fried tofu products that were still not good but still within the tolerance threshold, with the main type of defect being broken. Through the application of the Six Sigma method, significant improvement opportunities were found in reducing the defect rate through production process optimization and the implementation of Kaizen 5W+1H. This study concludes that the application of Six Sigma is effective in identifying, calculating the defect rate, analyzing the factors that cause defects, and providing improvement proposals for variations in defects in the production process to improve the quality of Sari Murni tofu products.
