Abstract

Prevalence people with high cholesterol according to RISKESDAS has increased, age >15 years in 2013 amounted to 35.9% and increased in 2018 to 54.3%. Hypercholesterolemia can be prevented by consuming high fiber. According KEMENKES RI, high-fiber foods are foods that contain 5 grams fiber per serving. Broccoli flour was chosen as additional food ingredient, it contains high fiber. The purpose of this study was to determine the effect of adding broccoli flour on the nutritional content, organoleptic, and selected formulation of tuna fish meatballs. The study used a completely randomized design (CRD) method with three treatments and two repetitions, namely F1, F2, and F3. Analysis of nutritional content using ANOVA test and Duncan test showed significant changes (P<0.05) on dietary fiber content and no significant effect on moisture, ash, protein, fat, and carbohydrate content. Organoleptic test analysis using Kruskal Wallis Test and Mann Whitney Test showed significant changes (P<0.05) in color, taste, aroma, and texture. Meatball F2 selected as the best formulation in one serving (100 grams) containing 130.5 kcal energy, 14.25 g protein, 1.94 g fat, 12.20 g carbohydrate, and 6.48 g fiber. These tuna meatballs can be a snack option for people with hypercholesterolemia and the general public.
