Abstract
The anthocyanin compound found in butterfly pea flowers has various benefits. The maximum benefits can be obtained if the extraction process is carried out correctly. Ultrasonic extraction is one of the modern extraction methods that has many advantages in increasing extraction efficiency. This study aims to determine the highest total anthocyanin content in water-HCl 1% extract of butterfly pea flowers under conditions of optimum time and amplitude using the ultrasonic extraction method. The extraction process uses an ultrasonic homogenizer with 9 treatments in the extraction process, that is amplitude (40, 60, 80%) and time (30, 45, 60 minutes). The results showed that extraction at 30 minutes and amplitude 60% produced the highest anthocyanin content of 117.9922 mg/L. Meanwhile, at 60 minutes and amplitude 80% had the lowest anthocyanin content of 51.2774 mg/L. The significance value of <0.001 (sig<0.005) in the results of the two way ANOVA data analysis illustrates that there is a significant difference between the anthocyanin content in water-HCl 1% extract of butterfly pea flower with the variables of time and amplitude. This means that time and amplitude influence the anthocyanin content in water-HCl 1% extract of butterfly pea flowers.
