Abstract
Synthetic dyes that are prohibited from being added to food include methanyl yellow. Methanyl yellow is often misused as a food coloring, one of which is wet yellow noodles. This research aims to identify methanyl yellow and determine methanyl yellow levels. This research method is qualitative testing using the Methanyl Yellow Test Kit and quantitative testing using HPLC. The results of qualitative testing from 54 samples showed that (11.11%) 6 samples were positive for methanyl yellow which experienced a color change from yellow to reddish purple. In addition, quantitative testing carried out wavelength optimization with a result of 415 nm, validation of analytical methods that met the requirements, and determination of the levels of 6 samples of wet yellow noodles that were positive for methanyl yellow with results of 0.00927%, 0.01024%, 0.01288% , 0.00421%, 0.00393%, and 0.00385% which are significantly different in all groups (sig. 0.000 < 0.05). The wet yellow noodles sold at the Pedongkelan Market, Kelapa Gading District, North Jakarta City, from 6 samples, were not safe for consumption because they tested positive for methanyl yellow. The results of this research do not comply with the regulations set by Permenkes No.239/Menkes/Per/V/85 and BPOM Regulation No 20 of 2019.
