Abstract

Green tea is a massively-consumed drink by the public because of its antioxidant properties. The primary sources of antioxidant action are its chemical compounds. The method of extraction can affect the concentrations of various chemicals in tea. Since honey contains secondary metabolites with possible antioxidant properties, the inclusion of additions like honey may also have an impact on the tea’s chemical compositions. The purpose of this study is to ascertain honey addition affects the amount of total phenolics and flavonoids content as well as the antioxidant activity of green tea decoction and infusion. Phenolic content was tested by Folin-Ciocalteu method, while flavonoid content by AlCl3 colorimetric method and antioxidant activity by DPPH method. Results show, the combination of tea decoction and honey produced the highest phenolic content (407.21 ± 0.56 mgGAE/g) and antioxidant activity (IC50 value 2.58 ± 0.28 µg/mL), while the highest flavonoid content was shown by tea decoction (164.89 ± 0.24 mgQE/g). According to the results, it can be concluded that the extraction method and honey addition were found to significantly impacted (p < 0.05) and strongly correlated (p < 0.05; r > 0.860) with levels of phenolics and flavonoids content as well as antioxidant activity.
