Abstract
The prevalence of cancer sufferers in Indonesia has increased in cases based on data from the Republic of Indonesia Basic Health Research in 2018. One of the efforts to prevent the risk of cancer that can be done is to overcome oxidative stress by reducing excessive levels of free radicals in the body. Consuming a high intake of antioxidants and vitamin C is one thing that can be chosen to prevent these risks. Lemon is a fruit that has a high vitamin C content and acts as an antioxidant. The addition of cogon grass roots aims to increase the antioxidant content of the lemon infused water drink. This study aims to utilize food products that have not been processed much but have a high beneficial value and determine the content of antioxidants, vitamin C, and consumer acceptance of the lemon - alang-alang infused water drink. This study used a completely randomized design (CRD) method with three formulations. Organoleptic test analysis used the Kruskal Wallis test followed by the Mann-Whitney test. Meanwhile, the analysis of antioxidant activity and vitamin C used the ANOVA test. The results of the organoleptic test showed that the variation of the lemon – cogon grass infused water mixture had a significant effect (p <0.05) on the level of preference in the taste and aftertaste aspects of lemon – cogon grass infused water. F1 infused water (30% Imperata: 50% lemon) is the best formulation that has the highest level of preference. Lemon infused water – cogon grass root contains 380 mg / 100ml of vitamin C and the value of IC50 = 6.89%.
