Abstract

Potatoes are one of the primary carbohydrates source besides rice. Many types of processed foods that use potatoes as the basic ingredients, one of them is French Fries. To process potatoes into French Fries requires a cutting process into a square shapes which generally takes a little longer process. In this paper are the steps to design a potato cutting tool that will help to simplify and shorten the process of cutting a potatoes. The purpose of this paper is to design a potato cutting machine with a capacity of 100 kg / hour by using a lever. The design process is chosen based on the assessment determined by the author. The potatoes are cut to a maximum of 60 mm in diameter. The material which is contact with the potatoes is a stainless steel. From the results of the design and calculation, the design of a potato cutting tool was measured ± 320 mm x 176 mm x 209 mm, the power needed for every cutting stroke is ± 214,2 kg. The blades that will be used on this tool will be arranged numbered with a distance of 10 mm, so that the resulting potato slices will have the same sizes. Then to find out the safety operations it will be analyzed using FEA (Finite Elements of Analysis). Keywords: Potatoes, French Fries, Potato Cutting.
