Abstract

Iron deficiency anaemia is a condition in which the haemoglobin in the blood is deficient and often experienced by adolescents and women of childbearing age. Pegagan leaves (Centella asiatica) are leaves with a fairly high iron content of 5,93 mg/100 grams of leaves, and guavas (Psidium guajava) with a fairly high vitamin C content (87 mg/100 grams of fruit) that is able to be used as functional food in the form of snacks to prevent anaemia. This research aims to analyze iron levels, vitamin C levels, organoleptic properties, and the chosen formula from the jelly candy product. The research method is experimental using Completely Randomized Design (CRD) with three levels of treatment and two repetitions with the different ratios of pegagan leaves extract and guava, in which F1 (75% : 25%), F2 (50% : 50%), and F3 (25% : 75%). Data analysis was conducted using ANOVA test for chemical analysis (iron levels) and showed that the formulations significantly affect the iron levels on jelly candies (p=0.001), although vitamin C could not be analyzed further using ANOVA test due to the amount of vitamin C that couldn’t be detected using HPLC (<0.01 mg/100 gram). While organoleptic results were analyzed using the Kruskal-Wallis test and shows that the formulation significantly affect the smell (p=0.000) and flavor (p=0.000), but it did not significantly affect the colour (p=0.470) and texture (p=0.291). Determination of the selected formula was carried out using the De Garmo method, with the selected formula being F2 (50% pegagan leaves: 50% guava). The serving size of the selected formula is 15 grams with an estimated nutritional content based on literature from the Ministry of Health Indonesia with the amount of 35.79 kcal, 0.22 grams of protein, 0.05 grams of fat, 5.76 grams of carbohydrates, while the micro nutritional content attained from the lab consists of 6.99 mg of iron.
