Abstract
Type 2 diabetes mellitus is a medical condition characterized by high blood glucose levels. Currently, diabetes mellitus has caused millions of deaths worldwide. Therefore, appropriate management is needed to curb the progression of this disease. Antioxidants are compounds that can scavenge free radicals, thereby helping to inhibit the progression of diabetes mellitus. The objective of this study was to analyze the effect of varying concentrations of corn silk tea and green tea on antioxidant activity, acetic acid content, and organoleptic quality, as well as to determine the optimal formulation and analyze its proximate composition. This study employed a Completely Randomized Design (CRD) with 5 treatment levels and 2 replicates. The variations in the concentrations of corn silk tea and green tea were as follows: F0 (0% : 100%), F1 (25% : 75%), F2 (50% : 50%), F3 (75% : 25%), and F4 (100% : 0%). The analysis results showed significant differences in the antioxidant activity (p=0.003) and aroma (p=0.009) of the kombucha. There were no significant differences in the acetic acid content (p=0.389), color (p=0.117), and taste (p=0.063) of the kombucha. The selected formula was F2, with 90.46% moisture content, 0.05% ash content, <0.04% protein content, <0.02% fat content, and 9.48% carbohydrates. Thus, variations in the concentrations of corn silk tea and green tea affected the antioxidant activity and aroma of kombucha but did not affect its acetic acid content, color, or taste.
