Abstract

Anemia among adolescent girls remains a nutritional problem in Indonesia and worldwide, highlighting the need for nutritious snack innovations. This study aimed to analyze the protein, iron, and vitamin C contents, organoleptic, and to determine the best formula. This study used a completely randomized design with three treatments (jack bean flour, moringa leaves, and tamarillo), namely F1 (40 g:6 g:14 g), F2 (45 g:4 g:16 g), and F3 (50 g:2 g:18 g), with two repititions. Protein was analyzed using the titration method (Kjeldahl), iron by Atomic Absorption Spectroscopy (AAS), and vitamin C by titration. One-way ANOVA followed by Duncan’s Multiple Range Test (DMRT) were used to analyze the nutritional data, whereas the Kruskal-Wallis followed by Mann-Whitney were used for the organoleptic data. The best formulation was selected using the De Garmo method. The results showed that the formulation significantly effected protein and iron contents, aroma, texture, and taste of the crackers (p<0.05), but had no effect on vitamin C content and color (p>0.05). F2 is the best formulation, a 40 g serving provided 5.47 g protein, 6.64 mg iron, and 0.0084 mg vitamin C, meeting the claims of being a source of protein and high in iron.
