Abstract
Indonesia's high disaster frequency requires emergency food that meets energy needs while supporting disaster victims' immune systems. This study analyzes the proximate composition, antioxidant activity, and acceptability of food bars made from Cilembu sweet potato, Bambara groundnut, and Coix seed as a functional emergency food alternative. Using a Completely Randomized Design, three formulations (F1: 75:25, F2: 50:50, F3: 25:75) vary the ratio of sweet potato flour to bambara groundnut flour, with coix seed held constant. Analyses include proximate composition, DPPH %inhibition, and organoleptic (hedonic scale). Ingredient proportion significantly affects protein content (8,09–10,65%, p=0,001), carbohydrate content (42,10–48,75%, p=0,012), and %inhibition (15,42%–51,62%, p=0,003), but has no significant effect on moisture (31,62%–33,98%), ash (1,44%–1,61%), fat (9,98%–11,66%), or energy content (315,94–317,89 kcal/100 g). Organoleptic testing shows a significant difference only in color, with median scores of 5,0–7,0 (p=0,003). Based on the De Garmo effectiveness index, F3 is the best formulation. Per serving (76 g/bar), F3 provides 240,11 kcal, 8,10 g protein, 8,86 g fat, and 31,99 g carbohydrate, with the highest antioxidant activity; however, its IC50 value (15509,52 ppm) remains very weak, so the immunomodulatory claim is not proven effective.
