Abstract
This study was conducted at Pabrik Tahu Krukut, where the tofu cutting process still relies on a conventional cutting tool with several limitations, including an unsuitable mold size, the absence of a positioning mechanism, and an unstable cutting process. These conditions result in inconsistent product dimensions, increased defective products, and lower cutting efficiency. This study aimed to develop an improved tofu cutting tool using the Value Engineering (VE) approach and to analyze differences in defective products, potential cost savings, cutting time efficiency, and investment feasibility. The research consisted of the information, function analysis, creative, evaluation, development, presentation, and implementation stages. The selected design was a folding grid cutting tool made of food-grade Stainless Steel 304. The implementation results showed that the average cutting time decreased from 17.41 seconds per board to 12.03 seconds per board, representing a 30.91% improvement. In addition, the number of defective products decreased from 156 pieces to 71 pieces, representing a 54.49% reduction. The Paired Sample T-Test indicated a significant difference in both the percentage of defective products and cutting time before and after the implementation of the developed tool, with a significance value of 0.000 (p < 0.05). Furthermore, the investment feasibility analysis resulted in a Payback Period of 0.45 years (5.4 months), a Net Present Value of IDR 10,047,397, and a Profitability Index of 9.37, indicating that the developed tofu cutting tool is financially feasible for implementation.
