Abstract

Turmeric and tamarind herbal drink is a susceptible to microbial contamination, which can pose a health risk. West Jakarta was the area with the highest incidenceof diarrhea due to food poisoning. Therefore, this study was conducted to analyze ALT, AKK, and MPN levels in turmeric and tamarind herbal drinks that sold at modern herbal cafes in West Jakarta. Samples were obtained from three modern herbal cafes using the total sampling technique. The testing included ALT, AKK, and MPN tests, and the data were analyzed using SPSS 22, specifically the Shapiro–Wilk test and the Kruskal–Wallis test. Based on the results, the ALT values for samples A, B, and C were 0; 4.7 × 10³; and 1.18 × 10³ CFU/mL, respectively. The AKK values for samples A, B, and C were 0; 3.3 × 10³; and 1.36 × 10² CFU/mL, respectively. The MPN values for samples A, B, and C were 0; 7.4 × 10²; and 0 MPN/mL, respectively. All these results remained below the maximum limits permitted by the Indonesian Food and Drug Administration (BPOM). The Kruskal–Wallis test showed a p-value of < 0.05, indicating that there were significant differences among the samples for the ALT and AKK test parameters. Meanwhile, the MPN test showed a p-value of > 0.05, indicating that there were no significant differences among the samples. It can be concluded that all samples of turmeric and tamarind herbal drinks sold at modern herbal cafes in West Jakarta meet microbiological safety requirements and are safe for consumption.
