Abstract
Tempe is a fermented soybean-based food product widely consumed in Indonesia, particularly within small and medium enterprises that produce tempe mendoan and tempe chips. The slicing process is still commonly performed manually, requiring considerable time and effort while resulting in inconsistent slice thickness. This study aims to design and develop an automatic tempe slicing machine to increase production capacity and produce uniform slices according to the required standards. The research methodology includes need identification, concept design, alternative design selection, manufacturing processes, and machine testing. The developed automatic slicing machine has frame dimensions of 500 × 500 × 700 mm and uses a 150-watt electric motor with a pulley–belt transmission system, equipped with an adjuster to control slice thickness. The machine frame is made of steel angle bars, while the cutting chamber is constructed from food-grade stainless steel. The test results show that the machine operates automatically with stable slicing speed and produces more uniform slices. The production capacity achieved during testing is 24 kg/hour.
