Abstract
Meatballs are one of the favorite foods of Indonesians and are consumed in large quantities, especially in the micro, small, and medium enterprise (MSME) sector. However, the manual process of making meatballs is still widely used and is considered inefficient and unhygienic. This study aims to design and develop an efficient, energy-saving, user-friendly, and MSME-appropriate electric motor-based meatball-making machine. The machine is designed using a vertical screw conveyor system driven by a 1/2 HP electric motor operating at 1400 rpm. The main components of the machine include a hopper, screw conveyor, transmission system, and cutter, with food-grade materials used in parts that come into direct contact with the dough. Test results show that the machine can produce an average of 174 meatballs per minute with a production capacity of approximately 110.10 kg/hour. The average diameter of the meatballs is 26.2 mm, slightly exceeding the target of 25 mm, and some shapes are not yet fully round, indicating that aspects of size and shape consistency still need to be improved. The total production cost of the machine is Rp5,216,526, making this equipment suitable for implementation by SMEs.
