Abstract

Maintaining product quality is a crucial aspect of the manufacturing industry to ensure optimal operations and sustained customer satisfaction. This study was conducted at UMKM Tempe Ozan with the aim of analyzing quality control using the Six Sigma method through the DMAIC stages (Define, Measure, Analyze, Improve, Control). To support the analysis, several tools were utilized, including control charts, Pareto diagrams, and Fishbone diagrams. The data analyzed consisted of the number of defects and the total production of tempe, with the objective of calculating the defect rate and evaluating the main causes of product defects. The results showed that the quality of tempe products was still within acceptable limits, although two dominant types of defects were identified soft-textured tempe and soybeans that appeared brown or dull with a total of 392 defective units. The DPMO (Defects Per Million Opportunities) value of 1.429 indicates that the production process operates at a Six Sigma level of 4 which has not yet reached the ideal level of 6. These findings demonstrate that the Six Sigma method is effective in identifying the acceptability of product defects, uncovering the root causes, and providing improvement suggestions to enhance product quality at UMKM Tempe Ozan.
