Abstract

Anemia is a condition where there is a deficiency of hemoglobin in the body. Adolescent girls are one of the age groups at risk of anemia due to being in a growth phase and experiencing menstruation. One way to prevent anemia in adolescent girls is by developing food products rich in protein and iron. Cookies are chosen for this product because they are commonly consumed as snacks and can be substituted with flour high in protein and iron content, such as catfish flour and red bean flour. This research uses a Completely Randomized Design with 3 treatments and 1 control treatment. Testing was conducted on the chemical, physical, and organoleptic properties of the products. Data on the chemical and physical properties of the cookies were analyzed using ANOVA, and differences between the formulations were analyzed using Duncan's test. Organoleptic data were analyzed using the Kruskal-Wallis test, and differences between formulations were analyzed using the Mann-Whitney test. The testing revealed significant effects of the addition of both substitute flours on the chemical properties (P<0.01), physical properties (P<0.01), and organoleptic properties (P<0.05) of the cookies. The best formulation among the three treatments was obtained with F1 (20 g wheat flour, 5 g catfish flour, and 25 g red bean flour).
