Abstract
Pidada fruit (Sonneratia caseolaris) is one of the fruits derived from mangrove plants. The fruit has various health benefits and a long shelf life. The large population of mangrove forests and the distinctive aroma and sour taste of pidada fruit make it a business idea for coastal communities. One of the preparations produced from the fruit is dodol pidada fruit. However, in the process of processing dodol pidada such as the cutting process is still done in a conventional way. Therefore, the design of an automatic cutting machine for small industries processing pidada fruit dodol will be carried out to overcome the problems that occur during the cutting process. The research method used will begin with identification of needs, concept design, design selection and analysis, manufacturing and testing processes. The cutting machine made has dimensions of 1200 × 600 × 450 mm and uses a push system from a linear actuator, a driving source from a 200 watt electric motor and a cutting system using 16 rotary blades with a knife spacing that adjusts to the desired dodol piece size. The results of the production capacity obtained from testing the automatic cutting machine of pidada fruit dodol is as much as 42 kg/hour.
